Once the brine has completely cooled, marinate the pork belly in it in the refrigerator for at least 8 hours. If desired, the marinade can be left for as long as 3 days. When it’s ready to be roasted, preheat the oven to 375 degrees. Drain the pork belly and rub with olive oil and a little salt before placing on 2 chopped onions for 1 and 1/2 to 2 hours.
